Cherry Cashew No-Bake Bars

This week’s episode looks at what cooking does to nutritional value of food. Bottom line is that when food touches water (boiling, simmering, poaching), water soluble vitamins like Vitamin C are lost in food. Steaming is the best way to preserve vitamins and nutrients.

Cherry Cashew No-Bake Bars

inspired by a post on PaleoHacks website 

Ingredients:

1 cup frozen cherries

1 cup cashew butter

2 tablespoons maple syrup

Directions:

Place cherries, cashew butter, and maple syrup in a food processor or blender; blend until smooth. 

Line a loaf pan with parchment paper. Spread cherry mixture evenly into pan; freeze at least 8 hours.

Cut into bars and store in the freezer.
