Eggs Baked in Avocado

We focused on fats this week on Relish’d. Here is a quick overview and Baked Avocados to entice your appetite.

Four Types of Fats:

Saturated - examples are butter, cream, lard, cheese, beef, lamb, palm and coconut oil

Unsaturated

  • Monounsaturated - examples are olive oil, canola oil, peanut oil, avocados, peanut butter

  • Polyunsaturated - examples are flax oil and seeds, sunflower oil, salmon, sardines, chia seeds

Trans - examples are hydrogenated or partially hydrogenated oils found in margarines, shortening, oil for frying, processed foods


We typically want to focus on having the monounsaturated and polyunsaturated fats in our diet.


Eggs Baked in Avocado

Ingredients:

1 avocado, halved and pitted

1/2 lime

salt and ground black pepper

2 eggs

1 green onion, chopped



Preheat oven to 450 degrees F.

Place avocado halves in a loaf pan and squeeze lime over each; season with salt and black pepper.

Crack 1 egg into each avocado half.

Bake in the preheated oven until desired doneness is reached for each egg, 10 to 12 minutes. Top baked avocados with green onions.
