Baked Blueberry Oatmeal

This week we talk about foods that can boost our moods. Here is a list of foods we discussed and a recipe for Baked Oatmeal.

Our mood is based on many different elements: stress level, sleep, genetics, environment, and food and nutrition. These foods have been found to possibly boost mood:

  • Fatty Fish

  • Oysters

  • Blueberries

  • Dark chocolate

  • Fermented foods (kimchi, yogurt, kefir, kombucha, and sauerkraut)

  • Oats

  • Breakfast

  • Coffee

  • Green Tea

  • Spinach and Leafy Greens


Baked Oatmeal with Blueberries and Bananas

Ingredients:

1 banana, sliced

1 1/2 cups blueberries, divided

3/4 teaspoon ground cinnamon

1/4 cup maple syrup, divided

1 cup oats

1/4 cup walnuts

1/2 teaspoon baking powder

salt

1 cup almond milk

1 egg

1 teaspoon vanilla extract

Directions:

Preheat oven to 375 degrees F and lightly oil a ceramic baking dish.

Arrange banana slices in a single layer on the bottom of the ceramic dish. Sprinkle half the blueberries over the bananas and top with 1/4 teaspoon cinnamon and 1 tablespoon maple syrup. Cover dish with aluminum foil.

Bake until bananas soften, about 15 minutes.

Combine oats, half the walnuts, baking powder, remaining cinnamon, and salt. Whisk remaining maple syrup, almond milk, egg, and vanilla extract together in a separate bowl. Pour oat mixture over banana mixture. Pour milk mixture over oats. Sprinkle remaining blueberries and walnuts over oats.

Bake in the oven until browned on top and oatmeal is set, about 30 minutes.
