Meyer Lemon Coconut Macaroons
This week’s episode is about lemons! The origin of lemons isn’t completely clear, but it is mostly agreed that they come from around Northeast India, Myanmar, or China. They used to be used as ornamental plants and then used medicinally, for eating, and for cleaning. Because lemons are high in Vitamin C, they have many health benefits.
Health benefits:
Lemons help release nutrients from other foods. For example when cooked carrots have lemon juice added to them, the carotenoids in the carrots are more accessible.
Antioxidants
Boosts immune system because white blood cells are stimulated due to the Vitamin C
Increases iron absorption
May improve heart health
May lower cholesterol
May lower stroke risk
May help people with kidney stones
May promote skin health

*The Meyer lemon I used was huge, so when I added all the juice I realized I needed more flour to soak it up. So I added probably 1/2 cup more almond flour. I then put the batter in the refrigerator for 10 minutes. I think it would have helped if I refrigerated it for closer to an hour. They were super tangy and super delicious.
