Coconut Rice Pilaf with Peppercorns

This week’s episode is about peppercorns, with a major focus on black pepper. Black peppercorns are indigenous to Kerala, India. There are different types of peppercorns (green, pink, white, and red) which I go into detail about on the show. Piperine is the active ingredient in black pepper that gives the health benefits.

Health Benefits:

  • Antioxidant

  • Stimulates the release of stomach acid, which helps in digestion

  • May improve cholesterol levels

  • A source of Vitamin C, Vitamin K, Vitamin E, and Vitamin A

  • Helps the absorption of other nutrients, for example black pepper helps our body absorb curcumin (the active compound in turmeric)

  • Anti-inflammatory

  • May help improve brain function

  • May help with blood sugar control
