Jalapeño Lime Slaw

This week’s episode is all about limes! Limes originate around Southeast Asia and South Asia. The two main versions in the US are Persian limes and Key limes (aka Mexican limes).

Limes are a good source of Vitamin C, which is important for collagen production, as an antioxidant and anti-inflammatory, and may help prevent kidney stones.

Jalapeño-Lime Slaw     by How To Feed a Loon*The peanut oil isn’t necessary (you could use another oil), but it makes this slaw extra delicious. We put this on tacos and on sandwiches for a couple of days. It was even better the second day.
