Indian Potatoes with Fenugreek

This week’s episode is all about fenugreek, an herb that has a wonderful maple syrup scent.

  • The seeds of the plant are dried and used in cooking

  • The leaves are often eaten as a vegetable in India

  • Fenugreek is often used in spice blends, in Indian cooking, as a flavoring agent in imitation maple syrup, and in beverages

  • It has been found by some new mothers to help with breast milk production

*I wasn’t able to find fenugreek leaves, so just added a little more of the fenugreek seeds. This was great with a side of lentils at dinner and with an egg the next morning at breakfast.
