Homemade Oyster Crackers

This week’s episode is all about wheat: the history, types of wheat and flour, and health benefits.

Wheat is a cereal grass that originally grew in the Fertile Crescent (western Asia and Northern Africa).

There are so many versions of wheat: durum wheat, hard white wheat, soft white wheat, red wheat berries, spelt, khorosan wheat (aka Kamut(R)), emmer (farro), wheat flakes, spelt flakes, Kamut(R) puffs, bulgur wheat, freekah, and einhorn to name some.

Then there are the flours: all-purpose flour, bread flour, self-rising flour, durum flour, 00 flour, cake flour, pastry flour, and whole wheat flour.

Health benefits of whole wheat (and the other whole wheat grains like farro, etc.):

  • High in fiber

  • Source of folic acid

  • Antioxidants

  • Helps with gut health (prebiotic)
