Avocado Lime Popsicles

This week’s episode is about avocados! Avocados originate in Mexico and people have been consuming them for over 10,000 years. There are many different varieties of avocados, Hass being the most popular variety in the US.

Health Benefits of Avocados:

  • High in fiber

  • High in monounsaturated fats (good for the heart!)

  • High in potassium (good for blood pressure)

  • The fat in avocados helps the body absorb fat-soluble vitamins (Vitamin A, D, E, and K) better

  • May help lower cholesterol

  • May help regulate blood sugar


Avocado Coconut Popsicles

*I changed this recipe up a little bit. I used half canned full-fat coconut milk and half almond milk. I skipped the shredded coconut and juiced 1 lime into the mix instead. I used maple syrup instead of sugar.
