This week’s episode is about Vegetable Oil. What is Vegetable Oil?
Vegetable oil is a generic term for oil that is extracted from fruits, seeds, grains, and nuts - basically anything plant-based.
The most common vegetable oils used in the United States are soybean oil, canola oil, palm oil, and corn oil.
When we buy vegetable oil, it is usually soybean oil or canola oil or a mix of the two.
Soybean and canola oil go through a multi-step process of heating, mixing with hexane, refining, bleaching, and deodorizing.
Most vegetable oils are high in polyunsaturated fats, particularly omega-6 fatty acids, which are important. But it is important to also focus on oils that are high in omega-3 fatty acids and monounsaturated fats (e.g. olive oil, peanut oil, and avocado oil).
