BBQ Jackfruit Tacos and Strawberries and Cream Bars
This week’s episode talks all about jackfruit and pea protein powder. We’ll talk a bit about the nutritional benefits and two recipes.
Pea Protein Powder: a plant-based high protein source that is rich in iron. It is often used in smoothies, oatmeal, and baked goods.
Jackfruit: a fruit native to South India, high in antioxidants (carotenoids) and is used as a vegetarian, meat alternative. It is often used as a pulled pork alternative, in pizza, smoothies, stirfry, and curries.
Strawberries and Cream Protein Bars

Ingredients:
1/4 cup pecans
1/2 cup sliced almonds
1/3 cup pea protein powder
2 tablespoons maple syrup
2 cups gluten-free flour
3 tablespoons coconut milk
1 cup freeze-dried strawberries
1 tablespoon chia seeds
Directions:
Follow directions from here. The only difference I did was use all maple syrup instead of honey and maple syrup.
