Artichoke and Spinach Grilled Cheese

This week’s episode is about one of my favorite foods: artichokes. Artichokes are the edible flower from a thistle tree. We typically eat the artichoke heart and sometimes the leaves. Artichokes are native to the Mediterranean and are found in much of the cuisine.

Health Benefits:

  • High in fiber

  • Packed with antioxidants

  • May lower LDL (the ‘bad’) cholesterol

  • May lower blood sugar
