Thai Cabbage Salad

All about fiber in this week’s episode! Fiber has so many benefits for our overall health. There are two different types of fiber:

Soluble: dissolves in water, forming a gel-like material that can be helpful in lowering cholesterol and decreasing blood glucose levels. Examples include oats, peas, beans, apples, carrots, barley, and pears.

Insoluble: helps move food through the digestive system and doesn’t get absorbed in the body. Examples include whole wheat flour, cauliflower, corn bran, popcorn, chia seeds, flax seeds, and onions.

Fiber’s benefits:

  • Good for digestion and health of the intestines

  • May help lower cholesterol levels

  • May help control blood sugar

  • May help us live longer because it could decrease cardiovascular disease and cancer


Thai Cabbage Salad

Ingredients:

Dressing

1 lime, juiced

1 clove garlic, grated on microplane

1/2-inch piece fresh ginger, grated on microplane

1 tablespoon maple syrup

red pepper flakes

salt and ground black pepper

1/4 cup olive oil

Salad

5 cups sliced cabbage

1 carrot, cut into matchstick-size pieces

3 green onions, chopped

1/4 cup mint leaves

1/4 cup basil leaves

1/2 cup peanuts

1/4 cup pickled onions

Directions:

Place lime juice, garlic, ginger, maple syrup, red pepper flakes, salt, and black pepper in a bowl; whisk until well blended. Slowly stream olive oil into lime juice mixture while constantly whisking until dressing is smooth.

Arrange cabbage, carrot, green onions, mint leaves, basil, peanuts, and pickled onions in a serving bowl. Drizzle dressing over salad.
